
Growing up with the smells of fresh herbs, spices, bouillabaisse on the boil and roasting fowl, flavour of the exotic, the sounds of cutlery, eating and laughter, the Devlin brothers had a dream - They named their dream Why Not! To eat to drink to be merry what more could you want?
Completing their apprenticeships under farther Charly and running the esteemed fig tree restaurant both Che’ & Jules learnt the art of classic cookery then came the search for tastes from other lands.
After extensive travel and work abroad, From the rolling French Valleys to the heights of the Himalaya, the lakes of Russia down the length of the Mekong. The Deserts of Arabia, to the Northern Lights They have tasted, sipped and absorbed, Food and wine their inspiration & passion. Italian style, Japanese simplicity, Turkish history and Australian climate. Have formed their own philosophy “Local produce, Global Flavors”
It was here in their home town Byron Bay that the returned to, to create their dream!
